I’ve got to say pancakes are seriously up there on my favorites list. Wouldn’t you say so too? Seriously though, they have to be good ones. Obviously, I don’t have them every day, but when I’m feeling fancy, I get fancy aka make pancakes per se. Soooo it happens I was feeling a little cr.E.A.T.ive, and I came up with these super delicious and nutritious pancakes!!
Pancakes a la Fancy??
- 2 cups oat flour
- 1 tsp cinnamon
- 1-2 cup(s) almond milk (or any other nut milk)
- 1/2 cup rolled oats
- 1 tsp baking powder
- optional: 1 scoop protein powder, 1 tsp vanilla extract, and berries or chocolate chips
- To make life simpler, I pop this all into the blender that way I know everything is evenly mixed. Usually, about 2 minutes (medium heat) on each side should be enough to cook each side 🙂 — It’s possible that depending on your stove it may take less or more than 2 minutes.
